Heat damages active enzyme and also the powerful mother of vinegar, so we avoid the direct sunight and high heat. We avoid pasteurisation and never include additives. We strain the apple cider vinegar using the coasrse stainer. We keep our naturally fermented apple cider vinegar as nature intended.
